Chef Manuel Alonso, the visionary behind Casa Manolo, is renowned for his refined approach to Mediterranean cuisine. With a career spanning decades, he has mastered the art of combining bold yet harmonious flavours, emphasising fresh, high-quality ingredients sourced from Spain's coastal and inland regions. Drawing inspiration from his family's culinary heritage, he blends time-honoured techniques with contemporary touches, resulting in dishes that are both nostalgic and avant-garde. His experiences working alongside legendary chefs like Mart?n Berasategui and Juan Mari Arzak have deeply influenced his culinary approach.
Guests will embark on an unforgettable culinary journey featuring a meticulously curated menu that highlights exceptional ingredients and cutting-edge techniques, expertly paired with select Spanish wines. The experience begins with a choice of Welcome Signature Sangria or Toasted Beer Turia Maerzen de Valencia.
The evening continues with a selection of aperitivos paired with Sherry (La Bota Manzanilla 113, Equipo Navazos), including Bravas en copa (patatas bravas served in a glass), Gazpacho con aguacate (chilled Andalusian tomato soup with avocado), Croqueta de bogavante y quisquilla marinada (lobster croquette with marinated shrimp), and Crujiente de tapioca con ensaladilla de cangrejo azul (crispy tapioca with blue crab salad).
