Indigo Pearl hosted a spectacular showcase dinner for the Phuket Chapter of the prestigious, international gastronomic society ‘La Chaine Des Rotisseurs’. Thirty members and hospitality professionals, including Thailand chapter president Mr Joe P Thawilvejjakul, Khun Prakaikaew Na-Ranong, Indigo Pearl’s Deputy Managing Director and Mr. Kelly Lewis, General Manager of Indigo Pearl, attended the culinary event.
The Rivet Grill’s Executive Chef Appadoo Pravesh and Executive Sous Chef Robert Kirk created the ‘Voyage autour des 5 continents’ degustation menu especially for the evening.
Expertly paired with some of the finest wines from across the globe, the nine courses were designed tojourney the taste buds through sour, bitter, salty and sweet flavour experiences, whilst evoking and exciting the five senses.
Interspersed with palate cleansers such as ‘nitro’ orange sorbet with Thai basil air and kiku massuna sake, two of the tantalising dishes included:3Hot smoked blue fin tuna, lemon jam, ponzu-marinated seaweed with sour cream and pickled ginger sorbet.
